Spinach Quiche ("Popeye Pie")

Total time = 60 minutes
Prep time = 15 minutes + Cooking time = 45 minutes
This couldn't be much simpler, yet it is impressive for entertaining for brunch, lunch, dinner, or as an hors d'oeuvre.

3 eggs, beaten
½ c. whole milk
¾ c. regular or reduced fat mayonnaise
2 Tbl. flour
1 pkg. frozen chopped spinach, defrosted and squeezed
½ c. Swiss cheese, cubed
½ c. chopped scallions


directions
Preheat oven to 375 degrees. Combine all ingredients and mix well. Bake in glass pie dish for 45 minutes.

suggestions
You can throw together the ingredients whenever you have 15 minutes during the day and refrigerate the mixture until you're ready to bake it. Serve immediately, accompanied with a baguette and Mix 'n' Match Salad with walnuts, strawberries or pears and parmesan or feta cheese. Fancier option: Top with 3-4 layers of filo dough brushed with melted butter before baking.
