Broiled Mozzarella Eggplant

A quick vegetarian meal!

1 medium eggplant, peeled and cut into 1/3-inch slices
2 tablespoons melted margarine
2 cups grated mozzarella cheese
Salt and pepper to taste
directions
Place the eggplant on a broiler pan that has been covered with aluminum foil. Brush with the melted butter; sprinkle with salt and pepper. Broil until the eggplant turns light brown, then top with the grated mozzarella cheese. Continue to broil until cheese melts.
