2 cups thinly sliced cauliflower or 1 package (9 ounces) frozen, thawed 1 small onion, chopped 1/2 cup chopped green bell pepper 1 cup shredded cheddar cheese 1 cup milk 1/2 cup biscuit baking mix 3 eggs Salt and pepper to taste |

Cook the cauliflower in salted water until tender, about 10 minutes. Drain. Put into a lightly greased 9-inch pie plate.
Top with the onion, green pepper and shredded cheese. Set aside. Combine the milk, biscuit mix, eggs, salt and pepper. Beat with an electric mixer until smooth. Pour into pie plate. Bake at 375 degrees F for 20 to 25 minutes or until a knife inserted in the middle comes out clean. |
