Taco Soup
by Mary and Ligya Danner
This recipe was a runner-up in our Back to School Recipe Contest!
1 pound ground beef, browned
1 package taco seasoning
2 bell peppers, any color, cut into bite-size pieces
2 bunches green onions, chopped
1 small onion, chopped
1 tomato, chopped
1 package (8 ounces) manicotti pasta, uncooked
2 cups water
1 jalapeno, if desired
Toppings: sour cream, shredded cheese, chips, lettuce, tomatoes, salsa, avocado
directions
After browning the ground beef in a 2-quart or larger pot, add the taco seasoning and follow package directions, minus the final cooking time. Add the bell peppers, green onions, onion, tomato, pasta, water and jalapeno, if using. Cook until pasta is tender, adding more water if necessary.

Top individual serving bowls with desired toppings.

suggestions
Note: It shouldn't be very watery when finished, unlike the name "Taco Soup." But if it does come out that way, it will taste just the same.
