Roasted Soybeans


1 pound dried soybeans
2 tablespoons margarine, or soy margarine, melted
Cajun seasoning, chili powder, garlic powder, sea salt, or your favorite seasoning

directions
Wash the soybeans and place in a large Dutch oven. Cover the beans with water and bring to a boil. Turn the heat off and let the beans soak overnight. The next day, drain the soybeans. Add more water to cover, bring to boil, reduce heat and simmer for about 1 ½ hours. Drain.

Spread the soybeans in a single layer on a cookie sheet. Roast in a 350 degree F oven for about 2 hours, stirring occasionally. Drizzle the margarine over and sprinkle with your favorite seasoning. Let cool.

Store the roasted soybeans in an airtight container for up to one week.
