Bean and Cheese Quesadillas by Ruth Brister

This fast lunch or light evening meal is for two or can be halved for only one.

1/2 cup refried beans (half a can)
1/2 cup grated cheese
4 8-inch flour tortillas
1/4 cup sliced jalapeno peppers (optional)
Salsa
Sour cream


	Place one tortilla each on two microwave safe dinner plates. Spread beans on each, adding jalapenos and cheese as desired. Cover with the remaining tortillas. Microwave one at a time for 30 seconds on high then flip over and microwave another 45 seconds on high. Slice each into sixths and serve with salsa and sour cream on the side.
