Organic Grilled Cheese and Tomato Sandwich

1/2 pound organic cheddar, white and yellow, sliced thin, about 1/4 inch thick
1/2 stick organic butter
1 loaf of organic bread, your favorite, whole wheat, sourdough, etc.
1 to 2 large organic tomatoes
directions
Cut the bread into 1/2-inch to 3/4-inch thick slices. Layer cheese on one slice and top with two to three tomato slices. Top with another piece of bread to form a sandwich. Butter the outside of the bread.

Place, butter side down, in a skillet set on high and cook each side until the cheese is melted, the tomatoes warm and the bread golden and crispy. Serve.

Serve with a bowl of tomato soup for a delicious lunch or dinner.
