Cheerio Chicken

Total time = 50 minutes
Prep time = 15 minutes + Cooking time = 30-40 minutes
This delicious breaded chicken recipe is a great health alternative to fried chicken.

8-12 pieces of chicken (legs and thighs work very well)
1 c. plain yogurt
1-2 Tbl. grainy mustard
Teriyaki sauce (optional; we use soy vey)

Breading: make 2-3 cups of breading by grinding a mixture of the
following in your food processor, blender or by hand:
Italian-stle bread crumbs
Parmesan cheese
Honey nut Cheerios (we recommend a lot of these)
Regular Cheerios (optional)
Quaker Oats (optional)

directions
Preheat oven to 350 degrees. Mix yogurt and mustard together in a shallow bowl. Make breading and place in shallow bowl. Wash and remove skin of chicken pieces. Coat each piece with yogurt mixture, then dip thoroughly in the breading. Lay on oven sheet coated with aluminum foil. Bake chicken for 25-35 minutes, turning once. Serve with rice or sweet and crunchy couscous or green bean with sesame-soy-ginger sauce.

suggestions
For a crisper finish, sprinkle some teriyaki sauce on the chicken, then broil for the final 5 minutes.
