EZ Baked ZT
by Lisa Flaxman

Total time = 30 minutes
Prep time = 10 minutes + Cooking time = 20 minutes
Baked ziti is always a favorite in this author's house. Depending on what's in the fridge, I often make it more interesting by adding extra vegetables. For sauce, you can either use your favorite prepared kind or the homemade recipe from this book. The cottage cheese makes it creamy and gives it protein.

1 pkg. (16 oz.) ziti, penne pasta or any other cut pasta
2 c. tomato sauce or any pasta sauce
1 c. low-fat cottage cheese
1/2 c. mozzarella cheese
Parmesan cheese

directions
Preheat over to 350 degrees. Cook pasta and drain. Toss with tomato sauce, cottage cheese, mozzarella, and vegetables, if desired. Spread evently in baking pan and top with parmesan cheese. Bake uncovered for 20 minutes or until hot and serve. Serve with Italian-style cauliflower.

suggestions
Optional: add cooked peas, steamed broccoli, cooked carrots, cooked sausage, and/or steamed asparagus.
